Claimed by both the cuisines of Beijing and Szechuan, it’s a staple on American Chinese menus, and there are popular versions in Japan, India, Pakistan, and Southeast Asia. Hot and sour soup is often made with pork or chicken and typically includes bamboo shoots, mushrooms, and tofu.
